Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter
melted
1/4 cup granulated sugar
1 teaspoon vanilla extract
24 oz (680g) cream cheese
softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped cream
1 cup chopped fresh strawberries
1 cup crushed graham crackers
1/2 cup sliced almonds
1/4 cup granulated sugar
1/4 cup unsalted butter
melted
1 cup fresh strawberries
sliced
Instructions
- In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract for the crust. Press mixture into the bottom of a 9-inch springform pan.
- In another bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until fully incorporated. Gently fold in whipped cream and chopped fresh strawberries.
- Spread the cheesecake filling over the prepared crust and smooth the top. Refrigerate for at least 4 hours or until set.
- For the strawberry crunch topping, combine crushed graham crackers, sliced almonds, granulated sugar, and melted butter in a bowl. Stir until well combined.
- Once the cake is set, sprinkle the strawberry crunch topping over the cheesecake. Decorate with sliced fresh strawberries before serving.
Notes
For best results, chill the cake overnight to enhance the flavors. You can substitute almonds with walnuts or pecans for a different crunch texture.
