salt and pepper to taste

1 cup mixed vegetables

chopped green onions or parsley (optional

Instructions

  • In a large skillet or pan, combine the chicken, rice, chicken broth, BBQ sauce, honey, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
  • Cover the pan and cook for 20-25 minutes, or until the chicken is cooked through and the rice has absorbed the broth.
  • Add the mixed vegetables during the last 5 minutes of cooking, stirring to combine.
