Description

One-Pan Garlic Potatoes & Asparagus is a simple yet flavorful dish that combines creamy Yukon gold potatoes with crisp asparagus, all enhanced by fresh garlic and a hint of lemon.


Ingredients

1.5 lbs (approx. 700g) Yukon gold potatoes

1 lb (approx. 450g) asparagus

4 cloves garlic

1/4 cup (60ml) olive oil

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons (30ml) lemon juice

2 tablespoons chopped fresh parsley


Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the Yukon gold potatoes with olive oil, minced garlic, oregano, salt, and black pepper until evenly coated.
  • Spread the potatoes on a baking sheet in a single layer and roast for 20 minutes.
  • While the potatoes are roasting, prepare the asparagus by trimming the woody ends.
  • After 20 minutes, remove the baking sheet from the oven, add the asparagus to the potatoes, and toss them together.
  • Return the sheet to the oven and roast for an additional 10-15 minutes, or until the potatoes are tender and both vegetables are lightly browned.
  • Once cooked, drizzle with fresh lemon juice and garnish with chopped parsley before serving.

Notes

For extra flavor, consider adding a pinch of red pepper flakes or a sprinkle of parmesan cheese before serving.
