2 tablespoons extra-virgin olive oil

pounds skinless center-cut salmon fillet cut into 1-inch pieces

8 cloves garlic thinly sliced divided

¾ teaspoon salt divided

½ teaspoon crushed red pepper

5 cups broccoli florets

2 medium red bell peppers seeded and chopped

1 tablespoon water

1 teaspoon grated orange zest

1½ tablespoons orange juice

1 tablespoon reduced-sodium tamari

1 tablespoon thinly sliced scallions


Instructions

  • Heat the olive oil in a large skillet over medium heat.
  • Add half of the sliced garlic and sauté until fragrant.
  • Season the salmon pieces with ½ teaspoon of salt and the crushed red pepper, then add to the skillet.
  • Cook the salmon for about 4-5 minutes, turning occasionally.
  • Add broccoli florets and red bell peppers to the skillet.
  • Drizzle water and cover the skillet to steam the vegetables for about 5 minutes.
  • Uncover, add remaining garlic, orange zest, orange juice, tamari, and remaining salt, and cook for another 2-3 minutes until everything is heated through.
  • Garnish with sliced scallions before serving.

Notes

For a spicier kick, increase the amount of crushed red pepper. This dish pairs nicely with brown rice or quinoa.
