1/2 (32 ounce) package frozen diced hash brown potatoes

1 pound bulk pork sausage

1 red bell pepper

chopped

1 yellow bell pepper

chopped

1/2 cup chopped onion

2 cloves garlic

minced

1/2 teaspoon dried oregano

4 cups fresh spinach

4 ounces Monterey Jack cheese

shredded

12 large eggs

2/3 cup whole milk

2 teaspoons Dijon mustard

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper


Instructions

  • Preheat your oven to 375°F (190°C) and lightly grease a large baking dish with cooking spray.
  • In a skillet over medium heat, cook the pork sausage until browned, breaking it apart as it cooks. Drain excess fat.
  • Add chopped onions, garlic, red bell pepper, and yellow bell pepper to the skillet. Sauté for about 5 minutes until vegetables are softened.
  • Stir in dried oregano and fresh spinach, cooking until spinach is wilted. Remove from heat.
  • In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and black pepper.
  • Spread the hash brown potatoes evenly in the prepared baking dish. Layer the sausage and vegetable mixture on top, followed by the Monterey Jack cheese.
  • Pour the egg mixture over the layers in the baking dish.
  • Bake in the preheated oven for 30-35 minutes or until the eggs are set and the top is slightly golden.
  • Allow to cool for a few minutes before slicing and serving.

Notes

This casserole can be prepared the night before and refrigerated to save time in the morning. Just bake it straight from the fridge for a delicious breakfast.
