Ingredients

2 cups fresh peas
shelled (or frozen peas
thawed)
1 cup ricotta cheese
½ cup heavy cream
¼ cup fresh mint leaves
finely chopped
2 tablespoons lemon juice
Salt and pepper

1 tablespoon olive oil
Fresh mint leaves
for garnish
Edible flowers
for garnish (optional)
Instructions
- In a blender, combine the peas, ricotta cheese, heavy cream, mint leaves, lemon juice, salt, and pepper. Blend until smooth.
- Pour the mixture into a greased terrine mold or a loaf pan lined with plastic wrap. Smooth the top and cover with plastic wrap.
- Refrigerate for at least 4 hours or until set. For best results, chill overnight.
- Once set, remove the terrine from the mold and slice. Drizzle with olive oil and garnish with fresh mint leaves and edible flowers if desired.
Notes
Make sure to use fresh peas for the best flavor; if using frozen, thaw and drain them thoroughly.
