Ingredients
4 medium-sized peaches
peeled
pitted
and diced
1/4 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
10 egg roll wrappers
Vegetable oil (enough for deep frying
around 2 cups)
1/4 cup powdered sugar (for dusting)
1/4 cup sugar mixed with 1 teaspoon cinnamon
1 egg
beaten with a splash of water
Instructions
- In a medium bowl, combine the diced peaches, granulated sugar, cornstarch, ground cinnamon, nutmeg, lemon juice, and vanilla extract. Stir until well mixed and set aside.
- Lay out an egg roll wrapper on a clean surface, with a corner pointing towards you. Place a generous spoonful of the peach filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly, using the egg wash to seal the edges. Repeat with remaining wrappers and filling.
- In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes each side. Remove and drain on paper towels.
- Dust the hot egg rolls with powdered sugar or roll them in the cinnamon sugar mixture while still warm. Serve warm and enjoy!
Notes
For an extra touch, serve with vanilla ice cream or whipped cream on the side.
