2 1/2 cups fresh or frozen peach slices
thawed and drained

1 vanilla bean
split and scraped

2/3 cup all purpose flour
1/2 cup sugar
1/3 cup almond flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup milk
1 large egg
1/2 teaspoon almond extract
8 tablespoons salted butter
divided
ice cream or whipped cream

Instructions
- Preheat the oven to 350°F (175°C) and butter a baking dish.
- In a bowl, combine the peach slices, 1 tablespoon sugar, lemon zest, lemon juice, and half of the vanilla bean seeds. Place in the prepared baking dish.
- In another bowl, whisk together the all-purpose flour, 1/2 cup sugar, almond flour, baking powder, and salt.
- In a separate bowl, mix the milk, egg, almond extract, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined, then pour the batter over the peaches.
- Dot the top with remaining butter and bake for 30-35 minutes or until golden brown and set in the center.
