1/3 cup almond flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 cup milk

1 large egg

1/2 teaspoon almond extract

8 tablespoons salted butter

divided

ice cream or whipped cream

Instructions

  • Preheat the oven to 350°F (175°C) and butter a baking dish.
  • In a bowl, combine the peach slices, 1 tablespoon sugar, lemon zest, lemon juice, and half of the vanilla bean seeds. Place in the prepared baking dish.
  • In another bowl, whisk together the all-purpose flour, 1/2 cup sugar, almond flour, baking powder, and salt.
  • In a separate bowl, mix the milk, egg, almond extract, and melted butter until well combined.
