2 teaspoons vanilla extract
4 large eggs
3/4 cup unsweetened cocoa powder
1¾ cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 2/3 cups peanut butter chips (10-ounce package)

Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, melt the butter and mix in the sugar and vanilla extract until well combined.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the cocoa powder, flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in 1 1/3 cups of the peanut butter chips, reserving the rest for topping.
- Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 25-30 minutes or until a toothpick comes out clean from the center of a cupcake.
- Remove from the oven, allow to cool slightly, then top with remaining peanut butter chips.
