2 large eggs

½ teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

3 tablespoons olive oil or melted butter (for searing)

Optional garnish: fresh parsley or lemon wedges


Instructions

  • Preheat the oven to 375°F (190°C).
  • In three separate bowls, set up your breading station: 1) Put the flour in the first bowl, 2) In the second bowl, whisk together the eggs and milk, 3) In the third bowl, combine the chopped pecans, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  • Dip each chicken breast first into the flour, covering it completely, then into the egg mixture, and finally into the pecan-breadcrumb mix, pressing gently to adhere.
  • In a large skillet, heat the olive oil or melted butter over medium heat. Once hot, carefully add the coated chicken breasts.
  • Sear each side for 3-4 minutes until golden brown.
  • Transfer the seared chicken breasts to a baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let rest for a few minutes before slicing.
  • Garnish with fresh parsley or lemon wedges as desired and serve.
