cold and cubed (113 g)

3/4 cup buttermilk (180 ml)

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon peppermint extract

1 cup white chocolate chips or chunks (180 g)

2 tablespoons crushed peppermint candies for topping

1 cup powdered sugar (120 g)

12 tablespoons milk or cream

1/4 teaspoon peppermint extract


Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  • In another bowl, whisk together the buttermilk, egg, vanilla extract, and peppermint extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Fold in the white chocolate chips or chunks.
  • Turn the dough out onto a floured surface and gently knead it a few times.
  • Form the dough into a circle, about 1-inch thick, and cut into wedges.
  • Place the scones on the prepared baking sheet and sprinkle with crushed peppermint candies if desired.
  • Bake for 20-25 minutes or until lightly golden.
  • For the glaze, whisk together powdered sugar, milk or cream, and peppermint extract until smooth, then drizzle over cooled scones.
