Ingredients

Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, sauté until softened and fragrant.
- Add the asparagus spears and cook for an additional 5 minutes, stirring occasionally.
- Pour in the vegetable or chicken broth and bring to a simmer. Cook for 15-20 minutes until the asparagus is tender.
- Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend just half of it.
- Season with salt, pepper, and freshly squeezed lemon juice to taste.
- Serve hot, garnished with freshly grated Parmesan cheese and reserved asparagus tips.
