Ingredients

2 cups basmati rice

1 teaspoon salt

1 teaspoon saffron threads

2 tablespoons hot water

1 tablespoon butter

0.5 cup slivered almonds

0.5 cup pistachios

1 large onion thinly sliced

0.5 cup dried apricots chopped

0.5 cup raisins

0.25 cup dried cranberries

2 tablespoons candied orange peel

2 tablespoons butter or ghee for cooking


Instructions

  • Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  • In a small bowl, steep the saffron threads in the hot water and set aside.
  • In a large pot, melt 1 tablespoon of butter over medium heat, add the sliced onion, and sauté until golden brown.
  • Stir in the slivered almonds and pistachios, cooking for 2-3 minutes until fragrant.
  • Add the dried apricots, raisins, dried cranberries, and candied orange peel, cooking for an additional 2 minutes.
  • Drain the soaked rice and add it to the pot, mixing to combine all the ingredients.
  • Pour in 4 cups of water and add salt along with the saffron water. Stir gently and bring to a boil.
  • Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes until rice is tender and water is absorbed.
  • Fluff the rice with a fork and add the remaining butter or ghee before serving.

Notes

For an extra special touch, you can garnish the rice with additional nuts and fruits before serving.
