Instructions

  • Preheat your oven to 375°F (190°C). Season the chicken with a mix of ground cumin, smoked paprika, salt, and pepper.
  • In a large skillet, heat oil over medium heat and add minced garlic. Sauté until fragrant, then add the seasoned chicken and sear until golden brown on both sides.
  • Transfer the chicken to the oven and bake for about 25 minutes or until cooked through.
  • For the green sauce, blend together cilantro, mayonnaise, sour cream, jalapeños, garlic, oil, and lemon juice until smooth. Adjust seasoning as needed.
  • In another pot, melt butter and sauté shallots and garlic until soft. Add rinsed jasmine rice and stir for a minute.
  • Pour in chicken stock, add turmeric, cumin, onion powder, salt, and pepper. Bring to a boil, then reduce heat and cover. Cook until rice is fluffy and liquid is absorbed, about 15 minutes.
  • Stir in frozen peas before serving, and let sit for a few minutes off the heat.
  • Serve the baked chicken over the yellow rice and drizzle with the green sauce. Enjoy!

Notes

Feel free to customize the heat level of the green sauce by adjusting the jalapeños. You can also substitute Greek yogurt for mayonnaise for a lighter option.
