This easy-to-make Pineapple Upside Down Cake combines the sweetness of caramelized pineapples with a moist, fluffy cake mix. It’s a simple yet decadent dessert that works perfectly for any occasion.
Ingredients
1 box of yellow cake mix (or vanilla/butter cake mix)
1 can of pineapple rings (or fresh pineapple)
1/2 cup (1 stick) butter, melted
1 cup brown sugar
Pineapple juice from the can (if using canned pineapples)
Maraschino cherries (optional)
1 egg, vegetable oil, and water (for the cake mix, check the instructions on the box)
Instructions
Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or cooking spray.
Layer the pineapple rings on the bottom of the cake pan. Pour pineapple juice from the can over the rings and sprinkle brown sugar evenly on top. Drizzle the melted butter over the sugar.
If using, place a maraschino cherry in the center of each pineapple ring.
Prepare the cake batter as per the instructions on the box (typically adding eggs, vegetable oil, and water).
Pour the prepared cake batter over the pineapples and smooth it into an even layer.
Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let the cake cool in the pan for about 10 minutes before flipping it over onto a serving plate.
Allow the cake to cool before serving and enjoy!
Notes
For extra flavor, you can add pecans, shredded coconut, or a sprinkle of cinnamon to the topping.
If you want to use fresh pineapple, slice it into thick rings and reserve some juice for caramelizing.
If the cake seems too soggy, reduce the pineapple juice or bake it a little longer.
