1 cup shredded coconut
1 cup powdered sugar
2 tablespoons milk for frosting
1 teaspoon pink food coloring
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the milk and vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt, then gradually add the dry ingredients to the wet ingredients.
- Fold in the shredded coconut until evenly distributed.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
- To make the frosting, combine powdered sugar, 2 tablespoons of milk, and pink food coloring in a bowl and mix until smooth.
- Spread the pink coconut frosting over the cooled cake and let set before cutting into bars.
