Pistachio Kataifi Cookies are a delightful blend of crispy kataifi pastry and nutty, aromatic pistachios, drizzled with honey for a sweet finish.

200g kataifi pastry
1 cup shelled pistachios finely chopped
½ cup unsalted butter melted
½ cup granulated sugar
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ cup honey
¼ cup water
A pinch of salt
Chopped pistachios for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the melted butter, sugar, vanilla extract, ground cinnamon, and a pinch of salt.
- Gently mix in the kataifi pastry until it is fully coated in the butter mixture.
- Fold in the finely chopped pistachios until evenly distributed.
- Shape the mixture into small cookies and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- While the cookies are baking, prepare the honey syrup by combining honey and water in a small saucepan over medium heat until it simmers.
- Remove the cookies from the oven and immediately drizzle them with the hot honey syrup.
- Let them cool slightly before serving, optionally garnishing with additional chopped pistachios.
Notes
These cookies are best served warm and can be stored in an airtight container for several days.
