Description

Pistachio Kataifi Cookies are a delightful blend of crispy kataifi pastry and nutty, aromatic pistachios, drizzled with honey for a sweet finish.


Ingredients

200g kataifi pastry

1 cup shelled pistachios finely chopped

½ cup unsalted butter melted

½ cup granulated sugar

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

½ cup honey

¼ cup water

A pinch of salt

Chopped pistachios for garnish (optional)


Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the melted butter, sugar, vanilla extract, ground cinnamon, and a pinch of salt.
  • Gently mix in the kataifi pastry until it is fully coated in the butter mixture.
  • Fold in the finely chopped pistachios until evenly distributed.
  • Shape the mixture into small cookies and place them on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 25-30 minutes or until golden brown.
  • While the cookies are baking, prepare the honey syrup by combining honey and water in a small saucepan over medium heat until it simmers.
  • Remove the cookies from the oven and immediately drizzle them with the hot honey syrup.
  • Let them cool slightly before serving, optionally garnishing with additional chopped pistachios.
