1 cup unsalted pistachios (shelled and lightly toasted)

1 cup mascarpone cheese

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup strong brewed coffee (cooled)

2 tablespoons coffee liqueur (optional)

24 ladyfingers (savoiardi)

Chopped pistachios (for garnish)

Cocoa powder (for dusting)


Instructions

  • In a food processor, blend the pistachios until finely ground. In a bowl, mix the ground pistachios with mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
  • In a shallow dish, combine the cooled coffee with coffee liqueur (if using). Dip each ladyfinger briefly into the coffee mixture, ensuring they are soaked but not soggy.
  • In a serving dish, layer half of the soaked ladyfingers at the bottom. Spread half of the pistachio cream over the ladyfingers. Repeat with another layer of soaked ladyfingers and top with the remaining pistachio cream.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow flavors to meld.
  • Before serving, dust the top with cocoa powder and garnish with chopped pistachios. Serve chilled and enjoy!

Notes

For best results, allow the tiramisu to chill overnight. You can adjust the sweetness of the cream by adding more or less powdered sugar.
