These Prosciutto Asparagus Puff Pastry Bundles are a delightful blend of crisp asparagus, savory prosciutto, and rich gruyere cheese wrapped in flaky puff pastry.
Ingredients
Scale
2 sheets of puff pastry thawed but still cold
2 bunches of asparagus About 24 medium stalks or 32 small stalks
12 slices of prosciutto Substitute parma ham if desired
1 cup gruyere cheese shredded
4 teaspoon dijon mustard
1 egg
olive oil
salt & pepper
flaky sea salt Optional
Instructions
- Preheat your oven to 400°F (200°C).
- On a clean surface, roll out the thawed puff pastry sheets slightly and cut each sheet into quarters.
- Spread a teaspoon of dijon mustard on each pastry square.
- Place 2-3 asparagus stalks in the center of each square and top with a slice of prosciutto and a sprinkle of gruyere cheese.
- Fold the corners of the pastry over the filling to create a bundle and seal with a little water if needed.
- Place the bundles on a baking sheet lined with parchment paper.
- Beat the egg and brush it over each puff pastry bundle.
- Drizzle lightly with olive oil and season with salt and pepper, and sprinkle flaky sea salt if using.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Allow to cool slightly before serving.

Feel free to experiment with different cheeses or add herbs for extra flavor.
