Ingredients
½ (17.3 ounce) package frozen puff pastry
thawed
15 multi-colored cherry tomatoes
halved
or more to taste
1 tablespoon olive oil
1 teaspoon minced fresh parsley
1 clove garlic
crushed
salt and freshly ground black pepper to taste
1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
softened
1 large egg
beaten
5 large basil leaves
thinly sliced
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and cut into squares or circles.
- Place the pastry on a baking sheet lined with parchment paper.
- Mix the olive oil, minced parsley, garlic, salt, and pepper in a bowl.
- Spread the softened garlic and herb cheese over the pastry bases.
- Arrange the halved cherry tomatoes on top of the cheese, cut side up.
- Drizzle the olive oil mixture over the tomatoes.
- Brush the edges of the pastry with the beaten egg.
- Bake for 25-30 minutes, or until the pastry is golden and flaky.
- Garnish with fresh basil before serving.
