These Pumpkin Cheesecake Bars combine the richness of creamy cheesecake with the cozy flavors of pumpkin, making them a perfect fall-inspired dessert.
Ingredients
1 ½ cups (170 g) graham cracker crumbs
2 Tablespoons granulated sugar
1 Tablespoon brown sugar firmly packed
7 Tablespoons (100 g) salted butter melted
24 oz (680 g) cream cheese softened
¾ cup (150 g) granulated sugar
¼ cup (50 g) light brown sugar firmly packed
½ cup (113 g) sour cream
1 teaspoon vanilla extract
3 large eggs lightly beaten
⅔ cup (168 g) canned pumpkin
1 ½ teaspoons pumpkin spice
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9×9 baking pan.
- In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, brown sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of the prepared baking pan.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add granulated sugar, light brown sugar, sour cream, and vanilla extract, mixing until well combined.
- Add the eggs to the cream cheese mixture one at a time, mixing after each addition until fully incorporated.
- Stir in the canned pumpkin and pumpkin spice until smooth.
- Pour the pumpkin cheesecake filling over the crust in the baking pan, spreading evenly.
- Bake in the preheated oven for about 30 minutes, or until the edges are set and the center slightly jiggles.
- Remove from the oven and let cool completely in the pan before slicing into bars.
Notes
For best results, chill the bars in the refrigerator for several hours before serving. Top with whipped cream if desired.
