Ingredients
3 cups white sugar
1 (15-ounce) can pumpkin puree
4 large eggs
1 cup vegetable oil
⅔ cup water
3 ½ cups all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
2 teaspoons baking soda
1 ½ teaspoons salt
1 cup miniature semisweet chocolate chips
½ cup chopped walnuts
Instructions
Preheat oven to 350°F (175°C). Grease two standard loaf pans.
Mix wet ingredients: In a large bowl, whisk sugar, pumpkin puree, eggs, oil, and water until smooth.
Mix dry ingredients: In another bowl, combine flour, cinnamon, nutmeg, baking soda, and salt.
Combine: Gradually stir dry mixture into wet mixture until just blended.
Add-ins: Fold in chocolate chips and chopped walnuts.
Bake: Divide batter between pans and bake for 60–70 minutes, or until a toothpick comes out clean.
Cool: Let cool in pans for 10 minutes, then transfer to a wire rack.
Notes
Be sure not to overmix the batter to keep the bread soft.
You can swap walnuts for pecans or leave them out entirely.
Great for freezing—wrap slices individually and thaw as needed.
