Ingredients

1 stick (8 tbsp.) butter

cut into chunks

3 1/2 cups whole milk

1 1/2 cups flour

1/4 tsp. baking powder

4 eggs

3 1/4 cups sugar

1 tsp. vanilla extract

Zest of 2 lemons


Instructions

  • Preheat the oven to 350°F (175°C) and grease a muffin tin.
  • In a saucepan, melt the butter over medium heat. Add the milk and heat until warm.
  • In a large bowl, whisk together the flour, baking powder, and sugar.
  • In another bowl, beat the eggs and then stir in the vanilla extract and lemon zest.
  • Combine the wet ingredients into the dry mixture, mixing until smooth.
  • Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 30 minutes or until golden brown and a toothpick comes out clean.
  • Let them cool slightly before serving.

Notes
