Description

Quesabirria Tacos are a flavorful fusion of tender meat, aromatic spices, and melty cheese, all wrapped in a soft tortilla. Perfect for a hearty meal or a crowd-pleasing taco night.


Ingredients

2 teaspoons sesame seeds

2 teaspoons ground cumin

1 teaspoon whole black peppercorns

1 teaspoon coriander seeds

½ (1 inch) piece cinnamon stick

2 whole cloves

3 bay leaves

2 cups beef broth

2 tablespoons vegetable oil

4 guajillo chile peppers

2 small ancho chile peppers

1 chile de arbol chile pepper

1 large white onion

7 cloves garlic

minced

2 pounds beef or goat stew meat

cut into 1-inch cubes

¼ cup distilled white vinegar

2 teaspoons salt

2 teaspoons dried Mexican oregano

¼ teaspoon ground thyme

1 (14 ounce) can diced tomatoes

16 (6 inch) flour tortillas

1 cup grated Cheddar cheese

1 lime

cut into wedges

1 tablespoon chopped fresh cilantro

Instructions

  • Toast the sesame seeds, cumin, black peppercorns, coriander seeds, cinnamon stick, cloves, and bay leaves in a dry skillet until fragrant.
  • In a blender, combine the toasted spices with beef broth, guajillo chiles, ancho chiles, and chile de arbol. Blend until smooth.
  • Heat 1 tablespoon of vegetable oil in a large pot. Add chopped onion and garlic; sauté until softened.
  • Add the beef or goat meat to the pot and brown on all sides.
  • Pour the blended chili sauce over the meat, add vinegar, salt, oregano, thyme, and diced tomatoes. Bring to a boil, then reduce heat and simmer for about 1 hour, until the meat is tender.
  • Once the meat is done, shred it into pieces and set aside. Strain the liquid if desired for a smoother sauce.
  • In a skillet, heat the remaining vegetable oil. Dip tortillas in the reserved sauce, adding a portion of the meat and cheese to each taco, fold and cook until crispy.
  • Serve tacos with lime wedges and chopped cilantro on the side.

Notes

For added flavor, serve the tacos with a side of dipping broth made from the strained cooking liquid.
