Ingredients
4 large flour tortillas (8-inch size)
4 large eggs
½ cup (120ml) milk or half-and-half
1 cup (100g) shredded cheddar cheese (or any melting cheese)
2 tablespoons (30g) butter or oil for cooking
Salt and black pepper to taste
Optional fillings: ½ cup (75g) cooked bacon or ham chopped
½ cup (75g) diced bell peppers
¼ cup (30g) chopped onions
½ cup (75g) spinach or kale chopped
¼ cup (60g) cooked sausage crumbles
2 tablespoons (20g) diced tomatoes
Optional toppings: Sour cream
Salsa or pico de gallo
Avocado slices or guacamole
Hot sauce
Fresh cilantro
Instructions
- In a bowl, whisk together the eggs, milk, salt, and black pepper.
- In a large skillet, heat the butter or oil over medium heat. Pour in the egg mixture and cook, stirring gently until scrambled and just set.
- On one half of each tortilla, layer some scrambled eggs, cheese, and any optional fillings of your choice.
- Fold the tortillas in half and return to the skillet, cooking until the cheese is melted and the tortillas are golden brown, about 2-3 minutes per side.
- Remove from the skillet, slice into wedges, and serve with your choice of toppings.
