boneless chicken breast halves
cayenne pepper to taste
salt and ground black pepper to taste
all-purpose flour for dredging
2 tablespoons olive oil
1 tablespoon capers
drained
½ cup white wine
¼ cup fresh lemon juice
¼ cup water
3 tablespoons cold unsalted butter
cut in ¼-inch slices
2 tablespoons chopped fresh Italian parsley
Instructions
- Season the chicken breasts with cayenne pepper, salt, and black pepper. Dredge in flour, shaking off excess.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- Add capers, white wine, lemon juice, and water to the skillet, scraping up the browned bits. Bring to a boil and let simmer for 2-3 minutes.
- Reduce heat to low and whisk in cold butter until melted and smooth. Return the chicken to the skillet and coat with the sauce.
- Garnish with fresh parsley and serve immediately.
