Ingredients

  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • ½ head broccoli, cut into florets
  • 1 lb ground beef
  • 6 oz ramen noodles (2 packets, seasoning discarded)
  • Salt and pepper, to taste
  • Sriracha sauce, to taste

Sauce:

  • ¼ cup soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 2 tsp sriracha
  • 1 clove garlic, minced

Optional Garnish:

  • 1 scallion, chopped

Instructions

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add chopped onion and sauté until translucent.
  • Stir in bell pepper and broccoli; cook for about 3 minutes until slightly tender.
  • Add ground beef, breaking it apart as it cooks. Season with salt and pepper, and cook until browned.
  • Meanwhile, cook ramen noodles according to package instructions (without seasoning). Drain and set aside.
  • Add cooked noodles to the skillet with the beef and vegetables.
  • Stir in soy sauce, brown sugar, apple cider vinegar, minced garlic, and sriracha.
  • Toss everything together until well coated and heated through.
  • Garnish with chopped scallions if desired and serve immediately.
