1 pound ground lamb

1 (28-ounce) can crushed tomatoes

12 ounces cooked pasta

noodles or tubes

A small handful of marjoram

oregano or thyme

Instructions

  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 5 minutes.
  • Season with salt, black pepper, and red-pepper flakes, if using. If desired, add anchovy fillets and cook for another minute.
  • Stir in the tomato paste and ground lamb, breaking up the meat with a spoon, and cook until browned, approximately 6-8 minutes.
  • Pour in the crushed tomatoes, reduce heat, and let simmer for 15-20 minutes until the sauce thickens slightly.
  • Serve the lamb ragù over cooked pasta, drizzling with additional olive oil and topping with Parmesan or pecorino, and sprinkle with fresh herbs, if desired.
