12 oz chocolate candy coating melts

12 oz frozen raspberries

1/4 cup heavy cream

2 tbsp light corn syrup

5.5 oz semi-sweet chocolate

1 oz unsalted butter

1 cup heavy cream

25 large marshmallows

1/4 cup raspberry puree reduction

pink gel food coloring

fresh raspberries

chocolate shavings


Instructions

  • Melt the white candy coating melts with the oil-based color if using, then pour into silicone molds to create chocolate cups. Refrigerate until set.
  • Melt the chocolate candy coating and fill the set white cups, letting it cool and harden.
  • For the ganache, heat heavy cream and corn syrup until warm, then pour over finely chopped semi-sweet chocolate. Stir until smooth, then add in cooked raspberries and room temperature butter, mixing until combined. Allow to cool.
  • For the raspberry mousse, whip heavy cream until soft peaks form. In a separate bowl, melt the marshmallows in the microwave, then fold into the whipped cream along with raspberry puree. Add gel food coloring if desired.
  • Fill the chocolate cups with the raspberry-chocolate ganache, then top with raspberry mousse. Garnish with fresh raspberries and chocolate shavings before serving.
