Ingredients

Scale

Noodles:

  • 8 ounces dry lasagna noodles

  • 1 tablespoon olive oil

  • 2 tablespoons butter

Soup Base:

  • 2 tablespoons olive oil

  • 1 pound lean ground beef

  • 6 ounces bulk Italian sausage (casing removed)

  • 1 cup diced yellow onion

  • 3 cloves garlic, minced

  • 2 tablespoons tomato paste

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • 1/4 teaspoon dried oregano

  • 1/2 teaspoon freshly ground black pepper

  • 1 ½ teaspoons kosher salt (or to taste)

  • 1 (24-ounce) jar prepared marinara sauce or 3 cups homemade marinara sauce

  • 4 cups chicken broth

  • 2 ½ cups water

  • 2 tablespoons chopped fresh Italian parsley

Cheese Mixture:

  • 12 ounces ricotta cheese

  • 3 ounces mozzarella cheese, shredded

  • 1/2 cup finely grated Parmigiano-Reggiano cheese

Garnish (optional):

  • 1/2 cup torn fresh basil and Italian parsley leaves

Instructions

  • Prepare the noodles: Break the dry lasagna noodles into smaller pieces. Cook them according to package instructions. Once done, drain and set aside.

  • Cook the meats: In a large pot, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat. Add the ground beef and Italian sausage, cooking until browned.

  • Sauté the aromatics: Add the diced onion and minced garlic to the pot, cooking for about 2-3 minutes until fragrant.

  • Add seasonings: Stir in the tomato paste, crushed red pepper flakes (if using), dried oregano, black pepper, and kosher salt.

  • Simmer the soup base: Pour in the marinara sauce, chicken broth, and water. Stir to combine, then bring to a gentle simmer. Let the soup cook for about 10 minutes.

  • Add noodles and parsley: Stir in the cooked lasagna noodles and chopped fresh parsley, allowing the noodles to soak up the flavors.

  • Prepare the cheese mixture: In a separate bowl, combine the ricotta, shredded mozzarella, and Parmigiano-Reggiano cheeses.

  • Serve: Ladle the soup into bowls, and top each serving with a dollop of the cheese mixture. For added flavor, garnish with torn basil and parsley leaves.

Notes

  • For added texture and flavor, you can sprinkle extra Parmesan cheese on top before serving.

  • You can customize the soup by adding vegetables like spinach, zucchini, or bell peppers.

  • Substitute ground turkey or chicken sausage for a leaner version.

  • To make it gluten-free, use gluten-free lasagna noodles or any other gluten-free pasta.
