810 small corn tortillas

1 cup fresh spinach

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

Grated Parmesan or cheddar for sprinkling (optional)

Lime wedges for serving (optional)


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a blender or food processor, add the spinach, olive oil, salt, black pepper, and garlic powder. Blend until smooth.
  • Brush each corn tortilla on both sides with the spinach mixture. Cut them into chip-sized triangles.
  • Place the tortilla triangles in a single layer on a baking sheet. Bake for 12-15 minutes or until crispy.
  • Remove from the oven and let cool slightly. Sprinkle with grated cheese if desired.
