These Shamrock Chips are a fun and festive twist on traditional tortilla chips, perfect for celebrating Saint Patrick’s Day or adding a burst of color to your snack table.

8–10 small corn tortillas
1 cup fresh spinach
packed
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
Grated Parmesan or cheddar for sprinkling (optional)
Lime wedges for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender or food processor, add the spinach, olive oil, salt, black pepper, and garlic powder. Blend until smooth.
- Brush each corn tortilla on both sides with the spinach mixture. Cut them into chip-sized triangles.
- Place the tortilla triangles in a single layer on a baking sheet. Bake for 12-15 minutes or until crispy.
- Remove from the oven and let cool slightly. Sprinkle with grated cheese if desired.
- Serve warm with lime wedges on the side.
Notes
Feel free to adjust the seasoning to your preference. You can also use different types of cheese for variety.
