Ingredients
2 lbs chicken thighs – (skinless
boneless)
1 tbsp olive oil
¾ cup fresh cranberries – (divided)
2 tbsp reduced sodium soy sauce
2 tbsp maple syrup
¼ cup balsamic vinegar
3 cloves of garlic – (minced)
handful of fresh thyme sprigs
Salt and pepper to taste
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- In a bowl, mix together soy sauce, maple syrup, balsamic vinegar, minced garlic, salt, and pepper.
- Add the chicken thighs to the bowl and coat them well with the marinade.
- In a baking dish, arrange the marinated chicken thighs and sprinkle fresh cranberries and thyme sprigs on top.
- Drizzle olive oil over the chicken and cranberries.
- Bake in the preheated oven for about 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees F (75 degrees C).
- Let it rest for a few minutes before serving. Enjoy your meal!
Notes
Feel free to adjust the sweetness of the sauce by adding more or less maple syrup based on your taste. Fresh thyme can also be replaced with dried thyme if necessary.
