4 ripe but firm pears
120g goat cheese
1 tbsp chopped fresh thyme
1 tsp lemon zest
salt & pepper to taste
½ cup chopped walnuts
3 tbsp maple syrup
1 tbsp butter
pinch of cinnamon
sliced baguette toasted
fresh rosemary thyme or oregano for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Halve the pears and core them, then place them cut-side up in a baking dish.
- In a bowl, mix the goat cheese, thyme, lemon zest, salt, and pepper; spoon this mixture into the pear halves.
- In a small saucepan, heat the butter, walnuts, maple syrup, and cinnamon over medium heat until combined.
- Drizzle the walnut mixture over the stuffed pears.
- Bake the pears for about 30 minutes or until tender.
- Serve warm with toasted baguette on the side and garnish with fresh herbs.

For a dairy-free version, substitute goat cheese with a plant-based cheese alternative and use coconut oil instead of butter.
