100 grams Domino® Golden Sugar

4 grams egg white powder optional

100 grams egg whites

105 grams almond flour

105 grams Domino® Powdered Sugar

1 1/2 cups Domino® Powdered Sugar

1 tbsp meringue powder

4 tbsp water

2 drops black gel food coloring

1 drop yellow gel food coloring

1/2 cup all-purpose flour

1/2 cup unsalted butter

1/4 cup Domino® Golden Sugar

1 1/4 cup Domino® Powdered Sugar

1 tsp vanilla extract

1/8 tsp almond extract

1/2 tbsp milk or heavy cream

1/4 cup desiccated coconut shredded


Instructions

  • Preheat your oven to 280°F (140°C) and line a baking sheet with parchment paper.
  • In a bowl, combine the egg whites and egg white powder, then beat until frothy.
  • Gradually add the golden sugar while mixing until stiff peaks form.
  • Sift the almond flour and powdered sugar into the egg whites, and gently fold until fully combined.
  • Pipe the batter onto the prepared baking sheet in desired shapes and let rest for 30 minutes.
  • Bake for 18-20 minutes, then cool completely before filling.
  • For the filling, cream together the unsalted butter and golden sugar until fluffy, then add the flour, extracts, and milk until smooth.
  • Assemble the macarons by piping buttercream onto one shell and sandwiching it with another.
  • Prepare the royal icing by mixing meringue powder with water and powdered sugar until a thick consistency is achieved; tint as desired.
  • Decorate the macaron tops with royal icing to create Santa faces or desired designs.

Notes

For a firmer macaron shell, consider using the optional egg white powder. Ensure your egg whites are at room temperature for better incorporation.
