Ingredients
2 acorn squash, halved and seeded
1 pound ground sausage
1 cup chopped celery
½ cup chopped mushrooms
¼ cup chopped onion
1 large egg, beaten
½ cup sour cream
½ cup grated Parmesan cheese
Instructions
Preheat the oven to 400°F (200°C).
Cut the acorn squashes in half and remove the seeds.
In a skillet over medium heat, cook the ground sausage until browned, breaking it apart as it cooks.
Add the chopped celery, mushrooms, and onion. Sauté for 5-7 minutes until softened. Remove from heat and let cool slightly.
In a bowl, combine the sausage mixture with the beaten egg, sour cream, and Parmesan cheese. Mix well.
Spoon the filling into the hollowed-out acorn squash halves.
Place the filled squashes on a baking sheet and bake for 30-35 minutes, or until the squash is tender.
