6 cloves garlic

1 tablespoon oyster sauce (optional)

1 tablespoon cooking oil

2 tablespoons cooking oil (for frying)

½ cup water (optional

for tenderizing)

garlic fried rice (sinangag)

fried or sunny-side-up eggs (itlog)

vinegar dipping sauce (sawsawan)


Instructions

  • In a bowl, combine soy sauce, vinegar, brown sugar, minced garlic, black pepper, salt, oyster sauce, and cooking oil to create a marinade.
  • Add the thinly sliced beef to the marinade, ensuring all pieces are well coated. Allow it to marinate for at least 30 minutes, or preferably overnight in the refrigerator.
  • Heat 2 tablespoons of cooking oil in a skillet over medium-high heat.
  • Remove the beef from the marinade (reserve the marinade) and cook it in the hot skillet until browned and cooked through, about 5-7 minutes. Adjust the cooking time based on thickness.
  • For added tenderness, you can add ½ cup of water to the skillet after browning the beef, cooking it until the water evaporates.
  • Serve the savory beef tapa with garlic fried rice and sunny-side-up eggs. Optionally, serve with a vinegar dipping sauce made of vinegar, minced garlic, and chili.

Notes

For the best flavor, let the beef marinate overnight. Adjust the sweetness or saltiness of the marinade to taste. This dish pairs wonderfully with garlic rice.
