¼ cup butter
½ cup chopped onion

2 cloves garlic

4 cups chicken broth
1 (10 ounce) can peas
drained
4 cups diced
cooked chicken meat
2 cups buttermilk baking mix
2 teaspoons dried basil
⅔ cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt the butter over medium heat. Add the onion, celery, and baby carrots, and sauté until softened.
- Stir in the minced garlic and cook for an additional minute.
- Sprinkle in the flour, sugar, salt, basil, and pepper, stirring constantly for about 2 minutes.
- Gradually whisk in the chicken broth until smooth. Bring the mixture to a boil, then reduce heat and stir in the peas and cooked chicken.
- Pour the chicken mixture into a greased 9×13-inch baking dish.
- In a separate bowl, combine the buttermilk baking mix and dried basil. Stir in the milk until just combined.
