Ingredients
Cooked macaroni pasta: About 2 cups (around 200g)
shredded sharp cheddar: 1 cup
shredded mozzarella: 1 cup
large flour tortillas: Four (10-inch)
unsalted butter: 2 tablespoons
whole milk: 2 tablespoons
smoked paprika: ½ teaspoon
garlic powder: ¼ teaspoon
salt and black pepper to taste
optional add-ins: chopped scallions or cooked bacon bits
Instructions
- In a large mixing bowl, combine the cooked macaroni pasta, shredded cheddar, mozzarella, whole milk, smoked paprika, garlic powder, salt, and pepper. Mix well until creamy and combined.
- Heat a large skillet over medium heat and add 1 tablespoon of butter or oil. Place one tortilla in the skillet, and spread a generous amount of the mac and cheese mixture on one half of the tortilla.
- Fold the tortilla in half, covering the filling, and cook for about 3-4 minutes until golden brown. Flip and cook the other side for another 3-4 minutes until the quesadilla is crispy and the cheese is melted.
- Repeat with the remaining tortillas and filling. Cut into wedges and serve hot with optional toppings like chopped scallions or bacon bits.
Notes
For extra flavor, consider preparing your macaroni and cheese with additional spices or using a different cheese blend. Leftover mac and cheese works best for this recipe.
