Ingredients
400 g firm tofu
drained and patted dry
2 eggs
1 small onion
finely diced
2 cloves garlic
crushed
1 medium carrot
grated
1 small zucchini
grated and squeezed dry
½ cup rolled oats
⅓ cup almond meal or wholemeal breadcrumbs
2 tablespoons ground linseed
2 tablespoons reduced-salt soy sauce or tamari
1 tablespoon tomato paste
1 teaspoon smoked paprika
1 teaspoon dried mixed herbs or oregano
Black pepper to taste

Instructions
- Preheat your oven to 180°C (350°F) and lightly grease a loaf pan with olive oil.
- In a mixing bowl, crumble the drained tofu and combine it with the eggs, diced onion, crushed garlic, grated carrot, and grated zucchini.
- Add the rolled oats, almond meal (or breadcrumbs), ground linseed, soy sauce, tomato paste, smoked paprika, mixed herbs, and black pepper to the mixture. Stir well until all ingredients are combined.
- Transfer the mixture into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 30 minutes, or until the top is golden and firm to the touch.
- Allow the loaf to cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature.
