Description
This Scallop Spaghetti in White Wine Sauce is a luxurious yet simple dish that highlights the sweet, tender scallops with a creamy, tangy white wine sauce. Perfect for a romantic dinner or a special occasion.
Ingredients
1 tablespoon butter
1 tablespoon olive oil
4 cloves garlic minced
1 cup white wine
1 cup heavy cream
¼ cup Parmesan cheese shredded
2 tablespoons capers drained
1 teaspoon lemon juice freshly squeezed
salt to taste
8 oz spaghetti
1 pound scallops medium size
about 12–14 scallops thawed completely if frozen
¼ teaspoon salt
2 tablespoons olive oil
Instructions
- Cook the spaghetti according to package instructions until al dente; drain and set aside.
- In a large skillet, melt butter and olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in the white wine and let it simmer for 5 minutes, allowing it to reduce slightly.
- Stir in the heavy cream, Parmesan cheese, capers, and lemon juice. Season with salt, and let the sauce simmer for another 5-7 minutes until it thickens.
- While the sauce is simmering, pat the scallops dry with paper towels and season with salt.
- In another skillet, heat olive oil over high heat. Once hot, add the scallops, ensuring not to overcrowd the pan. Sear for 2-3 minutes on each side until golden brown and cooked through.
- Serve the spaghetti topped with the white wine sauce and seared scallops. Enjoy!
Notes
For best results, ensure scallops are completely thawed and patted dry before searing. You can adjust the amount of lemon juice based on personal preference.
