Ingredients
2 tablespoons neutral oil
1/2 cup cooked quinoa
fried wonton strips
1 cup vegetable oil
6 sheets wonton wrappers sliced into thin strips
3 cups finely shredded green cabbage
3 cups finely shredded romaine lettuce
2 1/2 cups rotisserie chicken
1/4 cup matchstick cut radishes
3 tablespoons sliced almonds
1/2 avocado sliced
1/2 recipe sesame ginger dressing
Instructions
- Heat 2 tablespoons of neutral oil in a small pan over medium heat, add the cooked quinoa, and toast until crispy.
- In another pot, heat the vegetable oil and fry the wonton strips until golden brown and crunchy.
- In a large bowl, combine the shredded cabbage, romaine lettuce, rotisserie chicken, radishes, sliced almonds, and add the crispy quinoa and fried wonton strips.
- Drizzle with the sesame ginger dressing and toss gently to combine.
- Top with sliced avocado before serving.
