c. brown sugar – packed

1 large egg

2 c. all-purpose flour

¼ tsp. kosher sea salt

¼ tsp. green gel food coloring

1 egg white

1 tbsp. water

¼ c. rainbow nonpareil sprinkles


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the room temperature butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg, vanilla extract, and almond extract, mixing until fully incorporated.
  • In a separate bowl, whisk together the flour and kosher sea salt.
  • Gradually add the flour mixture to the wet ingredients, mixing until combined.
  • Stir in the green gel food coloring until the dough is evenly colored.
  • Roll the dough into small balls and place them on the prepared baking sheet.
  • In a small bowl, whisk the egg white with water and brush it over the cookies.
  • Sprinkle rainbow nonpareil sprinkles on top of each cookie.
  • Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet before transferring to a wire rack.
