Ingredients
¾ c. salted butter – room temperature
⅓ c. brown sugar – packed
⅓ c. granulated sugar
1 large egg
2 tsp. vanilla extract
½ tsp. almond extract
2 c. all-purpose flour
¼ tsp. kosher sea salt
¼ tsp. green gel food coloring
1 egg white
1 tbsp. water
¼ c. rainbow nonpareil sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the room temperature butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract, mixing until fully incorporated.
- In a separate bowl, whisk together the flour and kosher sea salt.
- Gradually add the flour mixture to the wet ingredients, mixing until combined.
- Stir in the green gel food coloring until the dough is evenly colored.
- Roll the dough into small balls and place them on the prepared baking sheet.
- In a small bowl, whisk the egg white with water and brush it over the cookies.
- Sprinkle rainbow nonpareil sprinkles on top of each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet before transferring to a wire rack.
Notes
For best results, allow the cookies to cool completely before decorating. You can adjust the amount of green food coloring based on your desired shade.
