Enjoy these delicious Sheet Pan Chicken Pitas loaded with colorful vegetables and drizzled with a flavorful herby ranch dressing. Perfect for a quick weeknight dinner!
Ingredients
1.5 lbs boneless skinless chicken breasts cut into strips
2 cups bell peppers (red yellow and green) sliced
1 cup red onion sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
4 whole wheat or regular pitas
1/2 cup plain Greek yogurt or sour cream
1/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon dried dill
1 teaspoon dried parsley
1/2 teaspoon garlic powder
Salt and pepper to taste
Optional 1–2 tablespoons buttermilk or milk to thin the dressing
Instructions
- Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a large bowl, combine the chicken strips, bell peppers, and red onion. Drizzle with olive oil and sprinkle with garlic powder, onion powder, paprika, dried oregano, salt, and pepper. Toss well to coat.
- Spread the chicken and vegetable mixture evenly on the prepared sheet pan.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- While the chicken and vegetables are baking, prepare the herby ranch dressing by whisking together the Greek yogurt (or sour cream), mayonnaise, lemon juice, dried dill, dried parsley, garlic powder, salt, and pepper in a bowl. If desired, add buttermilk or milk to thin the dressing.
- Once cooked, remove the sheet pan from the oven and let it cool slightly. Warm the pitas in the oven for a few minutes.
- To assemble, fill each pita with the chicken and vegetable mixture and drizzle with herby ranch dressing. Serve immediately.
Notes
This recipe is easily customizable; feel free to add your favorite vegetables or spices. For a spicier kick, include some chili powder or hot sauce!
