Ingredients

Instructions
- Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
- Cut the chicken breasts into bite-sized pieces and season them with salt and pepper.
- Chop the bell peppers and red onion into large pieces.
- If using fresh pineapple, cut it into chunks; if using canned pineapple, drain it well.
- Combine the chicken, bell peppers, red onion, and pineapple in a large bowl, and drizzle with olive oil. Toss well to coat.
- Spread the mixture evenly on the prepared sheet pan.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
