Description

This Sheet Pan Hawaiian Chicken is a vibrant and easy-to-make dish featuring succulent chicken breasts paired with colorful bell peppers, sweet red onions, and juicy pineapple, all roasted together for a delicious tropical flavor.

Ingredients

Chicken breasts

Orange bell peppers

Yellow bell peppers

Red bell peppers

Red onion

Fresh pineapple or canned pineapple

Instructions

  • Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  • Cut the chicken breasts into bite-sized pieces and season them with salt and pepper.
  • Chop the bell peppers and red onion into large pieces.
  • If using fresh pineapple, cut it into chunks; if using canned pineapple, drain it well.
  • Combine the chicken, bell peppers, red onion, and pineapple in a large bowl, and drizzle with olive oil. Toss well to coat.
  • Spread the mixture evenly on the prepared sheet pan.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Serve warm, garnished with fresh herbs if desired.

Notes

Feel free to substitute chicken thighs or tenderloins for the chicken breasts, and use any combination of bell peppers you prefer.
