Shipwreck Casserole is a comforting, hearty one-dish meal made with ground beef, macaroni and cheese, vegetables, and melty cheddar cheese. Easy to prepare and endlessly customizable, this classic casserole is perfect for busy weeknights or cozy family dinners.
Ingredients

1 pound lean ground beef

1 (7.25 oz) package macaroni and cheese mix (dry pasta + cheese packet)

1 (14.5 oz) can diced tomatoes (with juice)

1 cup milk

1 cup frozen peas
-
1 cup frozen corn
-
1 teaspoon seasoned salt (or to taste)

1 cup shredded cheddar cheese, divided
Instructions

Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.

Add the uncooked macaroni, cheese packet, diced tomatoes, milk, peas, corn, and seasoned salt to the skillet. Stir to combine.

Mix in ½ cup of the shredded cheddar cheese.

Transfer mixture to the prepared baking dish and spread evenly.

Sprinkle remaining ½ cup cheddar cheese over the top.

Cover with foil and bake for 25 minutes.

Uncover and bake an additional 5–10 minutes, until bubbly and lightly golden.

Let rest for 5 minutes before serving.
