Ingredients

Large shrimp

ripe avocado

red onions

Instructions

  • If using raw shrimp, steam them until they are pink and opaque, about 5-7 minutes. If using pre-cooked shrimp, thaw them if frozen and set aside.
  • Cut the ripe avocado into chunks and add them to a mixing bowl.
  • Finely chop the red onions and add them to the bowl with the avocado.
  • In a small bowl, whisk together the extra virgin olive oil, fresh squeezed lime juice, cumin, salt, and pepper to make the dressing.
  • Pour the dressing over the avocado and red onion, then gently fold in the cooked shrimp. Make sure not to mash the avocado.
