This refreshing Shrimp Avocado Salad combines tender shrimp with creamy avocado and zesty dressing for a perfect light meal.
Ingredients
Large shrimp
ripe avocado
red onions
extra virgin olive oil
fresh squeezed lime juice
cumin
salt
pepper
Instructions
- If using raw shrimp, steam them until they are pink and opaque, about 5-7 minutes. If using pre-cooked shrimp, thaw them if frozen and set aside.
- Cut the ripe avocado into chunks and add them to a mixing bowl.
- Finely chop the red onions and add them to the bowl with the avocado.
- In a small bowl, whisk together the extra virgin olive oil, fresh squeezed lime juice, cumin, salt, and pepper to make the dressing.
- Pour the dressing over the avocado and red onion, then gently fold in the cooked shrimp. Make sure not to mash the avocado.
- Serve immediately to enjoy the fresh flavors of the salad.
Notes
For a milder onion flavor, let the red onions marinate in the dressing for 5 minutes before adding them to the salad.
