Delightfully creamy and savory, this Shrimp Scampi Pasta Bake combines succulent shrimp, linguine pasta, and a flavorful garlic butter sauce, topped with crunchy Panko breadcrumbs for the perfect baked finish.
Ingredients
1 lb (454 g) medium shrimp
peeled and deveined
8 oz (227 g) linguine pasta
4 tbsp (57 g) butter
4 garlic cloves
minced
1/4 cup (59 ml) chicken broth
1/4 cup (59 ml) lemon juice
1/2 cup (50 g) grated Parmesan cheese
1/4 cup (15 g) chopped fresh parsley
1/2 cup (55 g) Panko breadcrumbs
2 tbsp (28 g) melted butter
1 tsp (2 g) lemon zest
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Cook the linguine pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt 4 tbsp of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Stir in chicken broth, lemon juice, and lemon zest.
- Mix the cooked linguine with the shrimp mixture. Stir in grated Parmesan cheese and chopped parsley.
- Transfer the pasta mixture to the greased baking dish.
- In a small bowl, combine Panko breadcrumbs and melted butter. Sprinkle the breadcrumb mixture evenly over the pasta.
- Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and the dish is heated through.
- Remove from the oven, let cool slightly, and serve warm.
Notes
For an extra kick, consider adding red pepper flakes to the garlic butter mixture. Garnish with more parsley before serving for a fresh look.
