2 chicken breasts sliced lengthwise

1 tbsp all-purpose flour
1/2 cup chicken broth
3/4 cup heavy cream
1/4 cup pesto
1/2 tsp lemon juice
1/4 cup sun-dried tomatoes
2 cups fresh baby spinach
freshly grated Parmesan cheese (optional)
Instructions
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- Season the sliced chicken breasts with garlic powder, salt, and pepper.
- In a large skillet, heat olive oil and butter over medium heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside. In the same skillet, add all-purpose flour and stir for 1 minute.
- Gradually whisk in chicken broth and heavy cream, bringing it to a simmer until it thickens slightly.
- Stir in pesto, lemon juice, sun-dried tomatoes, and fresh spinach until the spinach wilts.
