peeled and thinly sliced (about ⅛ inch thick)

2 tablespoons butter

1 tablespoon olive oil

1 small onion

finely chopped

2 cloves garlic

minced

1 ½ cups (360 ml) heavy cream

½ cup (120 ml) unsweetened almond milk

1 cup (100 g) shredded Gruyère cheese

1 cup (100 g) shredded cheddar cheese

¼ cup (25 g) Parmesan cheese

grated

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon nutmeg

1 teaspoon fresh thyme leaves

Optional garnish: Fresh parsley or thyme sprigs for serving


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, melt the butter and olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
  • Stir in the heavy cream and almond milk, bringing to a simmer. Mix in the salt, black pepper, nutmeg, and thyme.
  • Layer half of the sliced turnips in a greased baking dish. Pour half of the cream mixture over them, then sprinkle with half of the Gruyère and cheddar cheese.
  • Repeat the layers with the remaining ingredients.
  • Top with grated Parmesan cheese.
  • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly.
  • Let it cool for a few minutes before serving. Garnish with fresh parsley or thyme sprigs if desired.

Notes

For a richer flavor, use all heavy cream instead of almond milk. Feel free to adjust the cheese types to your preference.
