Sizzling Blackstone Fajitas are a flavorful and vibrant dish that brings the zest of Mexico to your table. With marinated grilled protein and colorful veggies, they are perfect for gatherings or a delicious weeknight dinner.
Ingredients
1½ pounds flank steak or chicken breast/thighs thinly sliced
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon black pepper
Juice of 1 lime
1 large red bell pepper thinly sliced
1 large green bell pepper thinly sliced
1 large yellow bell pepper thinly sliced
1 medium red onion thinly sliced
2 cloves garlic minced
3 tablespoons olive oil (for marinade)
2 tablespoons lime juice (for marinade)
1 tablespoon soy sauce (for marinade)
1 teaspoon honey (for marinade)
1 teaspoon smoked paprika (for marinade)
½ teaspoon crushed red pepper flakes (optional)
8–10 small flour or corn tortillas
Sliced avocado or guacamole
Sour cream or Mexican crema
Fresh cilantro chopped
Shredded cheese
Lime wedges
Instructions
- In a bowl, combine the sliced protein with 2 tablespoons of olive oil, smoked paprika, chili powder, garlic powder, onion powder, cumin, salt, black pepper, and lime juice. Mix well to coat and let it marinate for at least 15 minutes.
- Heat your Blackstone griddle over medium-high heat. Once hot, add the marinated protein and cook for 5-7 minutes until browned and cooked through, stirring occasionally.
- In the same pan, add sliced bell peppers, red onion, and minced garlic. Sauté for 5-7 minutes until the vegetables are tender but still crisp.
- Mix the cooked protein with the sautéed vegetables on the griddle for an additional minute.
- Serve the fajitas on warm tortillas and top with your choice of avocado, sour cream, cilantro, cheese, and lime wedges.
Notes
For extra flavor, allow the protein to marinate for longer, up to 24 hours. Adjust the crushed red pepper flakes based on your spice preference.
